Rum is the most diverse of all spirits categories. Spirits created from sugarcane started in Southeast Asia and India around 500 AD. Jamaican/Caribbean style rum began in the mid 1600s. Distilled in British style pot stills, it has a characteristic funky taste. Brazilian Cachaça and French Rhum Agricole soon followed. In the early 1900s, column still distillation began. The significantly less labor intensive column still produces a cleaner, lighter rum that highlights a wide spectrum of taste profiles, and allows for experimentation through blending.
